Electropolishing is an electrochemical process that removes a thin layer of metal from the tube surface. Pickling and passivation removes scale and restores the passive layer but does not reduce roughness. Electropolishing does both. Specify EP for product-contact, WFI, clean steam and high-purity lines; pickled and passivated tube is usually enough for utilities and non-contact service.
